Ingredients

20-25 minutes
Serves 4-5 people
  1. 1.1 lbsmustard greens (500 grams)
  2. 9 ozchenopodium greens (bathua) (250 grams)
  3. 9 ozspinach (250 grams)
  4. 6-7 clovesgarlic, minced
  5. 5-7green chilies
  6. 5-6 tablespoonscornmeal (makki ka atta) (about 45-60 grams)
  7. 2-inch piece ginger, minced
  8. Salt, to taste
  9. 3.5 ozdill greens (soya bhaji) (100 grams)
  10. For tempering:
  11. 2small onions, finely chopped
  12. 2-3 tablespoonsclarified butter (ghee)
  13. 2small tomatoes, finely chopped
  14. 1-inch piece ginger, grated
  15. 5-6 clovesgarlic, finely chopped
  16. 1 teaspooncumin seeds
  17. 2green chilies, finely chopped
  18. 1 pinchasafoetida (hing)
  19. 1/2 teaspooncoriander powder
  20. 1little salt, to taste

    Clean and chop all the greens, then wash them thoroughly two to three times. Add them to a pressure cooker to cook.

    Add the minced ginger, garlic, green chilies, and salt. Pressure cook for 4-5 whistles.

    In a large skillet, heat ghee and add cumin seeds, asafoetida, and onions. Sauté the onions well, then add the tomatoes and cook until soft.

    Once the tomatoes are cooked, add the cooked greens mixture. Let it cook for 10 minutes, stirring occasionally.

    Transfer the saag to a bowl. Serve hot with salad, pickled chilies, and makki di roti (cornmeal flatbread).
