Sarson ka Saag is a very popular dish from Punjab. It tastes amazing when served with ghee and makki di roti (cornmeal flatbread).

Clean and chop all the greens, then wash them thoroughly two to three times. Add them to a pressure cooker to cook.

Add the minced ginger, garlic, green chilies, and salt. Pressure cook for 4-5 whistles.

In a large skillet, heat ghee and add cumin seeds, asafoetida, and onions. Sauté the onions well, then add the tomatoes and cook until soft.

Once the tomatoes are cooked, add the cooked greens mixture. Let it cook for 10 minutes, stirring occasionally.

Transfer the saag to a bowl. Serve hot with salad, pickled chilies, and makki di roti (cornmeal flatbread).
