Ada Hengu Khechudi is a very simple khichdi made in Orissa. This khechudi is served as prasad in the famous temple of Lord Jagannath in Orissa. The rice is flavoured with just grated ginger and asafoetida. It is usually served with Dalma (a mixed vegetable and lentil-based dish from Orissa) . A super simple and satvik khechudi yet very flavourful. As they don't allow anybody inside the temple kitchen, the proportions are after lots of trials, the closest to the taste as experienced there.

Ingredients

  1. 1 cupgovindbhog rice
  2. 1 cupyellow moong dal
  3. 2 Tbspghee
  4. 2small bay leaves
  5. 1/2 tspasafoetida
  6. 1 Tbspfinely grated/ chopped ginger
  7. 1-2green chillies, south lengthwise
  8. to tasteSalt
  9. 1 Tbspghee for garnishing

Cooking Instructions

    Clean and wash the rice and moong dal well. Soak them separately for 2 hours. Place in a colander and let the excess water drain out.

    Heat 2 Tbsp ghee in a pressure cooker. Add bay leaves, asafoetida, ginger and slit green chillies. Saute for few seconds, taking care that they don't burn.

    Now add the soaked and drained rice and dal into the ghee tadka in the cooker. Mix well. Saute for 30 seconds.

    Now add 3 cups of water and salt. Mix well. Close the pressure cooker with whistle on and cook till 4 whistles. Switch off flame.

    Let the pressure release naturally. Open the cooker and gently fluff up the khechudi.

    Serve the khechudi hot. Pour 1 Tbsp ghee on hot khechudi. Divine!! 🙏
