  2. 4-5medium sized eggplants
  3. 2 cupschopped green garlic
  4. 2tomatoes diced
  5. to tasteBlack pepper
  6. to tasteSalt
  7. Ghee as required

    Method:

    Wash and oil the eggplants. Roast them on a tawa till soft. Remove the skin and mash the pulp with the help of a fork.
    In a wok heat ghee, add garlic and cook for about 2 minutes. Add the tomatoes and soften them. Now add the pulp and cook well. Season with salt and pepper and enjoy.
