Ingredients

  • 1 cupchickpea flour (besan) (about 120 grams)
  • 1 cuppure ghee (about 200 grams)
  • 1 cupfresh khoya (mawa) (about 200 grams)
  • 12-15cashews
  • 12-15almonds
  • 1/2 cupfresh plain yogurt (about 120 grams)
  • For the sugar syrup:
  • 1 cupsugar (about 200 grams)
  • 1 cupwater (about 240 ml)
  • 4-5green cardamom pods
  • 10-12saffron strands

    Ingredients are as follows:

    First, place the chickpea flour in a plate. Add 1 tablespoon ghee for shortening and mix well. Sprinkle a little lukewarm water and knead the flour with your hands. Cover and let it rest for 10 minutes. Then sift the flour through a coarse sieve and set aside.

    To make the sugar syrup, add 1 cup sugar and 1 cup water to a heavy-bottomed pan. Cook on low heat, stirring, until you get a two-thread consistency. Add saffron and cook for 2 more minutes. The syrup is ready; set aside.

    Heat ghee in a pan. Add the sifted chickpea flour and cook on low heat, stirring continuously, for 10 to 15 minutes.

    Add the khoya and cook for 5 more minutes, stirring. Then add the fresh yogurt. Continue to cook and stir the mixture on low heat for another 10 minutes.

    Add the prepared sugar syrup and cook, stirring constantly, on low heat for 5 to 10 minutes.

    The besan mixture for chakki is now ready.

    Grease a plate with ghee and spread the hot besan mixture evenly. Sprinkle chopped cashews and almonds on top. Cut into squares or diamond shapes while still warm.

    Place the cut pieces on a serving plate, garnish with cashews and almonds, and serve to your guests or enjoy yourself.
