There are so many varieties of paratha in Indian kitchen . In cold weather these are perfect for breakfast or brunch . Carrot parathas are not only delicious but also nutritious . The recipe is also easy and quick to cook.

There are so many varieties of paratha in Indian kitchen . In cold weather these are perfect for breakfast or brunch . Carrot parathas are not only delicious but also nutritious . The recipe is also easy and quick to cook.
Steps

Wash,peel and grate carrots and tomato (discard seeds of tomato)

In a big mixing bowl take whole wheat flour. Add oil/ghee and salt. Mix it well with fingers tips.

Now add other ingredients and mix all things well. Then pour required water and Knead the flour to make smooth dough. Now Cover the dough and leave it for 10 minutes.(If flour is sticky then add some dry flour)

Meanwhile let us make salsa fillings. Take a bowl,add chopped tomatoes, onion, coriander leaves,and other ingredients. Mix it well. Keep aside.

Now make medium sized balls from the dough and roll it with dry flour to make paratha.

Heat griddle and place paratha on it.When it cooked partly then Spread oil /ghee on it. Cook evenly from both sides till golden brown spots appear on it.

Now take out parantha on a plate and keep salsa filling in the centre of it.

Fold the parantha and insert toothpick to hold it. Serve these delicious healthy parathas hot with salsa,butter and pickle.
