Fluffy Pancakes

These pancakes came out fluffy and tasty; it was a perfect japanese pancakes without the height. I will try and recreate it just like Japanese pancake.

These pancakes came out fluffy and tasty; it was a perfect japanese pancakes without the height. I will try and recreate it just like Japanese pancake.

Mix together the egg yolks and milk then set aside; In a large bowl, sieve in flour and little salt and stir everything together and set aside.
In another large bowl, beat the egg whites adding sugar bit by bit with a hand mixer until stiff peaks form when lifted. - 2
In 3 batches, add the flour into the milk and egg york mix and make sure you have the right consistency if not add little water;

Once that is done, carefully fold the egg whites into the pancake batter, until just incorporated, making sure not to deflate the batter.
Place pan on low heat and grease pan before then, - 4
Take a scoop and pour into the pan and cover frying pan with a lid for about 5 minutes, then release the pancakes from the bottom of the pan with a spatula, then carefully flip them over, making sure not to spill any batter inside.

Cover and cook for another 3 minutes, then serve with either syrup or ice cream or any sauce of your choice
