Steps

Cut the brinjals into 4 pcs. Marinate it with turmeric and salt. In a pan add mustard oil. Put the brinjals and fry it. Keep it aside.

In a bowl take the curd add salt to taste and little water and make a smooth batter.

Now for the tadka. In a pan put oil. When the oil becomes hot, add the finely chopped garlic fry it till brown then add one by one a pinch of hing, dried red chiles, few mustard seeds, whole Jeera and few curry leaves.

Now in the serving try first put the fried brinjals, then the curd and then pour the tadka. Serve it with roti or paratha
