Toast bread and mash avocado, adding a pinch of salt.

In a small pan mix roughly equal quantities of oil and vinegar. Heat through, then mix in a teaspoonful of mustard and some chopped sun dried tomatoes.

Pour the hot dressing over the avocado. Eat!
