Wash nicely moong daal & chawal & soak for 1/2 an hour.Heat oil / ghee in a cooker put jeera let them crackle now add hing. Put all veggies & sauté for 5 minitus. Add soaked daal chawal & all spices mix well & cook for 2 -3 minutes.

Add water ; after 1 boil simmer the gas & cover the cooker with lid till 2 whistle.Switch off the gas; let the cooker cool down & then open & stir once.Garnish with chopped coriander & mint leaves

Enjoy healthy Yellow moong daal veggie khichadi with plain yogurt / mint & onion raita

You can fry some crushed garlic before making khichadi remove from oil / ghee & then use same ghee / oil for khichadi. Keep separate fried garlic for decor ur khichadi. If you like garlic then you can add 2-3 crushed garlic { if putting garlic then no hing if hing you are putting then no garlic }
