Telangana state has unique culture and traditions. The festivities (Bathukamma, Bonalu, Jataralu, etc...) of this region are very popular and celebrated with much vigor. Each festival is an epitome of a perfect balance between nature, seasons, people and food. Offering / consuming different varieties of food 🥘is an integral part of these festivities. The cuisine of this region is so versatile and culminates local and Nizami cuisines. Some of the state’s delicacies are sakinalu, chegollu, karam sakinalu, pappu, ghatu chaaru, potlakaya billalu and so on... With time, change in lifestyles and urbanization, some of these delicacies are slowly getting forgotten.
Godhuma Pindi Paasham/payasam {Wheat flour kheer/pudding} is one such delicacy which can be very easily prepared.

Ingredients

  1. 1/2 cupWheat flour
  2. 2 tbspOrganic jaggery
  3. 1.5 cupsWater or as needed
  4. 1/2 tbspCashews and raisins
  5. 2 1/2 tspGhee

Steps

  1. 1

    Take half a cup of wheat flour in a vessel and add water to form into a slurry. Keep aside. Prepare jaggery syrup in a Kadhai adding jaggery powder and water. Also, add crushed cardamom pods.

    Now add wheat flour slurry to the jaggery syrup and mix thoroughly to avoid forming any lumps. Cook the mixture on low flame for 5 minutes. Also, add 2 tsp ghee into it.

    Fry cashews and raisins in a small kadhai adding half tsp ghee.

    Transfer the wheat flour kheer into serving bowl and garnish with fried dry fruits.
