Ingredients

  1. 2 cupsdried chickpeas (about 400 grams)
  2. 2 cupsdried fava beans (about 400 grams)
  3. 1/2 bunchcilantro
  4. 1/2 bunchparsley
  5. 1/2 bunchfresh mint
  6. 1 headgarlic
  7. 1onion
  8. 1 tablespoonsalt
  9. Pinchcumin
  10. Pinchmixed spices
  11. 1 quartvegetable oil (about 1 liter) for frying
  12. 1 cupsesame seeds (about 150 grams), for garnish
  13. For the tahini sauce:
  14. 1 cuptahini (about 240 grams)
  15. 1lemon
  16. 1/4 cupwater (about 60 ml)
  17. Pinchsalt
  18. Pinchwhite pepper

Steps

    Soak the chickpeas and fava beans overnight.

  2. 2

    Wash the herbs thoroughly and chop them in a food processor.

  3. 3

    Grind the chickpeas and fava beans, then mix with the herbs and spices. Knead the mixture well.

  4. 4

    Heat the oil thoroughly. Shape the mixture using a falafel mold, dip lightly in sesame seeds, and fry until golden.

  5. 5

    To make the sauce: Mix all the sauce ingredients together.

  6. 6

    Serve as a sandwich or on a plate with your choice of vegetables and pickles. Enjoy!
