Cottage pie is made from beef, whereas real, Shepherd's pie, is made using lamb. Some people can use gravy granules, to make the gravy part. I can't because it contains MSG which I am allergic to. Also if you would like to add a cup of English peas to the filling feel free to do so. Oh you don't neccesarily have to use cheese.
A Proper Cottage Pie

Cooking Instructions

Peel wash and cube the potatoes. Cover with water and boil till fork tender. Drain the water. Add the butter, and milk. Shred the cheese and add to the potatoes. Add the parsley and salt.

Whip the potatoes well till creamy. Let rest. Chop the vegetables and melt the butter.

Sauté the vegetables for 12 minutes in the butter with the salt, pepper, garlic, and thyme. Add the beef and when browned add the wine and allow to reduce. Simmer 15 minutes. This can be done as you are doing the potatoes.

When the liquids are reduced add the flour and tomato paste. Stir and incorporate well. Let the flour cout and cook for 7 minutes. Add the broth.

Preheat the oven 400°Fahrenheit. Stir well stirring constantly this will thicken. Transfer to an oven safe pan I used an 8×12 pan about 2-1/2 inch deep. Spread it out evenly. Then add the mashed potatoes I used a spoon, but you can pipe it on.

Take a big fork and plow the field, put grooves on top. Then top off with 1 cup sharp cheddar cheese shredded. Put onto another pan. I put parchment paper on the bottom pan for easy cleanup. It's gonna bubble over!!!

Bake 30 minutes. Take out of oven and allow to rest 12-15 minutes before serving. I hope you enjoy!!!!

There are some cheats - I use Costco mashed potatoes (doctored up) for the topping but feel free to use fresh mashed potatoes. You can mix up the mash by adding parsnips, sweet potatoes or cauliflower. You can also use beef stock instead of red wine, I Iike that extra zinge so I prefer to use red wine instead to simmer the mince in.Some of the ingredients are approximate, I don't really use measures in this recipe as you can add a few things and it'll still taste great. You can add celery and peas to the meat as well.You can also reduce the heat and simmer it on low for 1 to 1 1/2 hours, until the meat has become really soft. Rae -

This is the other Irish dish for St. Paddy's Day that I was talking about. Well, technically, not really an Irish dish tho. I don't eat lamb (I am using chicken), so to call this a Shepard's Pie is like putting pineapples on pizzas. I definitely do not wanna offend any Irish people. Anyway, this recipe is inspired by the wonderful Gizzi Erskine. Pls, pardon my bad photoshoot as it starting pouring with dim lighting and you know how much I depend on natural lighting.I am not a fan of pie pastry crust, which is the reason why you hardly find any pie recipe on this webbie. But there is something wonderful about the pies in the U.K.; mashed potatoes are used as some sort of crusts. How wonderful is that? And what Gizzi did really blew my mind; she used cauliflower mashed instead! We know how "heavy" mashed potatoes are. And cauliflower mashed adds that sorta lightness as well as some floral aromatics to the dish. That ras el hanout really gives the whole dish an extra omph. So, kudos Gizzi!I am using lots of carrots, mushrooms and leeks for this pie. The finely blitz mushrooms add an extra ooey texture as well as an umami note to the dish. You can change the vegetables around. Onions, celery, squash and parsnips are really a great alternative combination. You can of cos use lamb of cos and call this shepherd's pie too. I actually intended to create an elegant slice of this pie, and I almost forgot that this is a hearty rustic dish that doesn't need any artsy plating. Daniel Lim
