Since strawberries are in season, I decided to make a delicious strawberry phirni, with bits of ice and finished off with a healthy kick of Yakult.

Since strawberries are in season, I decided to make a delicious strawberry phirni, with bits of ice and finished off with a healthy kick of Yakult.

Bring milk to a boil and then on low flame, cook till it it reduces to half.

Mix rice flour in 2 tbsp milk and add this paste to the simmering milk. Keep stirring to avoid getting any lumps.

When the mixture thickens, add sugar and milkmaid. Cook for another 5 mins.

After cooking sugar, take the phirni off the flame and let it cool in the fridge for 1-2 hours.

After chilling, mix strawberry puree (fresh strawberries blitzed in blender would also work).

Keep the phirni refrigerated.

At the time of serving, add a kick of health by diluting the phirni with Yakult.

Garnish with pistachios and chopped strawberries. Served immediately.
