Peel the potatoes,wash them and cut them into wedges. Put them in a sufuria and add water(same level as the potato wedges).add the grated garlic, salt, turmeric powder and the bay leaf. (You can use rosemary leaves instead of bayleaf)cover and boil for 5 minutes till the wedges are fork tender.

Drain the excess water and spread the wedges on a flat surface to cool. Meanwhile heat oil in a pan or sufuria till hot enough for frying

Carefully place your first batch in the oil, fry till the wedges are crispy. Remove them from oil and place them on a plate with serviettes in order to drain the excess oil. Repeat the same for the other batch. And voila,your wedges will be ready for serving. Serve with any meat and kachumbari.bon appetite
