Bring rice and 1 1/4 c water to a boil. Cover, reduce to low simmer, and cook 15-18 min.

Combine scallion whites and vinegar in a small bowl with salt. Allow to marinade. In another bowl, combine sesame oil, 1 tbs soy sauce, 1 Tbs sugar and stir until dissolved.

Cook veggies in olive oil, salt, and pepper for 3-5 minutes over med-high heat. Remove from pan.

In same pan veggies were in, add pork, ginger, garlic, and olive oil over med-high heat and brown meat. Add remaining soy sauce and cook until liquid has mostly evaporated. Season with salt and pepper.

Fluff rice, season with salt and pepper. Serve with pork and veggies, topped with pickled scallions, sauce, and green scallions.
