Rinse the lentils well and boil them until tender.

Rinse the bulgur well and drain it.

Once the lentils are cooked, remove 4 cups of the lentil cooking water and place it in a pot. Add the cooked lentils and salt to taste.

Bring the lentils to a gentle boil, then add the bulgur. Let them simmer together for a bit, then reduce the heat and cook until the bulgur is tender.

Slice the onions thinly and sauté them in olive oil until golden brown. Spoon the onions over the mujadara. Serve with salad or yogurt.
