In a desperate attempt to make orecchiette (which failed miserably), I salvaged the dough and made some simple cavatelli instead.

In a desperate attempt to make orecchiette (which failed miserably), I salvaged the dough and made some simple cavatelli instead.

Mix water into the semolina flour until you have a smooth, soft dough to make the cavatelli.

Roll the dough into ropes about the thickness of your finger.

Cut the ropes into 1/2-inch pieces and drag each piece on a cutting board with a knife or dough scraper to shape the cavatelli.

In a skillet, sauté some chopped onion (optional) and add the frozen mushrooms.

Meanwhile, bring a pot of salted water to a boil for the cavatelli.

The mushrooms will be ready after 6–7 minutes, once their liquid has evaporated.

Add the cream to the mushrooms and season lightly with salt.

Cook the cavatelli for about 5 minutes. Drain and toss them with the mushroom mixture.
