Okra masala with aubergine & sweet potato

Bhindi Masala (Okra Masala) I couldn’t resist cooking this recipe after seeing my 3 beautiful ladies @cookingwith_yui, @sonianicholas_cookpaduk & @m.a.dfoodie cooking them this morning 😄
I have just added aubergine & sweet potato with Okra. It turns really tasty. Thank you for your yummy recipe @m.a.dfoodie 😊 I am going to have this with brown rice.
This Okra is very popular in Bangladesh as well. We cook them in varieties way.

Steps

I have cut all the vegetables in medium size. Then keep the okra separate. Now in a frying pan pour oil. Add panch phoron & bay leaves.

Add onions and fry them until gets brown. Then add tomatoes and fry them again for few minutes. Fry the okras in another frying pan in full flame for 5mins. Once they are done keep them in a separate bowl.

Now add rest of the ingredients and cook them very well. First add aubergine & sweet potato in the gravy and cook for 10mins. Then add okras. Now cook for another 10mins. Add some water so that they don’t get burnt.

It can be served with rice or any kind of breads.
