This is, by far, my favorite recipe for blueberry pancakes. They are so good, we usually don't need butter or syrup for them. Usually we just make 4 very large pancakes with this recipe, but the amounts can easily be doubled. Recipe adapted from: pinchofyum.com

Ingredients

4-6 pancakes
  1. 3/4 cupbuttermilk
  2. 3/4 cupall purpose flour
  3. 1/4 cupwhole wheat flour
  4. 2 tbsp.granulated sugar
  5. 1 tsp.baking powder
  6. 1/2 tsp.baking soda
  7. 1/8 tsp.salt
  8. 1large egg
  9. 2 tbsp.melted butter
  10. 3/4 cupblueberries
  11. butter as needed for the griddle/pan

Cooking Instructions

    Whisk together the flours, sugar, baking soda and salt in a large bowl until combined. Add the buttermilk, egg and melted butter and mix until just combined. Then fold in the blueberries. Place this mixture aside while you get either a griddle or a nonstick pan/skillet heating over medium heat.

    Let a small pat of butter melt on the griddle, then spread about 1/3 cup of batter onto it. Cook until you start to see little bubbles on top and the edges begin to firm up. Then slip and cook for another couple of minutes until the opposite side is golden brown too. Repeat with the remaining batter and that's it!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
