Steps
- 1
Beat an egg with 1/2 cup of sugar syrup (which I prepared for jamun in 2:1 ratio of sugar and water with saffron and cardamom powder) until foamy and fluffy. Then add 1/2 of yogurt to it and beat again
- 2
Sieve 1 1/2 cup of all purpose flour and 1 tsp of baking powder.
- 3
Slowly mix dry ingredients with egg yogurt mixture. If it's too thick, you can added a tbsp of sugar syrup. It should be in a nice batter consistency.
- 4
Spray the cooking oil on the cupcake liners and start adding 2 tbsp of the batter, then place a mini jamun and again fill with the batter for 3/4 of the liner
- 5
Baked at 350F for 20 - 25 mins.
And the muffins are ready.Serve as such or you can add your favorite frosting to it and enjoy!
