Soak Chole for at least 8 hours, now pressure cook by adding little salt, teabag, soda and dry ingredients Tej Patta, 1badi elaichi,3 chote elaichi, 3 cloves, 3 peppercorns. Let it take 4 whistles at least on medium flame. One done go to step 2

Mix dry masala in one bowl. Salt, Kala Namak, garam masala, red chilli powder, dhania powder, turmeric powder, Cumin powder, kasuri meethi powder, anardana powder, sauf and ajwain powder, hing, amchur powder

Take a thick base pan add oil. Let oil heat and add onion till it turns pink, then add ginger garlic paste, after 2 mins of frying now add paste. Cover it with lid for about 2mins. Now add all dry masala we mixed in step 2 and let it cook. Keep stirring so that masala doesn't stick and mix well. Once the oil started coming out of masala now add Chole. Please ensure you remove the dry ingredients from the cooker aside and retain water (refer step one for dry ingredients).

Also, add the pressure cooked water to the pan. Let it boil nicely.now in another pan make a tadka. Add oil to the pan, add cumin seed, lasun Kali, green chilli and red chilli powder once tadka is ready add it to your Chole.

Your Amritsari Chole are ready.serve with onion and lemon and garma garam Puri.
