Bhindi with a twist of Achaar ;)
Steps

Prepare all your ingredients before hand to work quickly and efficiently.

Wash, cut the heads of okra and slice them into 2 pieces.

Heat oil in a pan and add the okras. Stir and cook on medium high flame until it is no more slimy. Do not over cook, once done remove from the pan and keep aside.

In the same pan add 2 tbsp more oil, add cumin, nigella, mustard, fenugreek seeds and let sizzle. Then add ginger and onions and cook until fragrant and translucent.

Now add the dry ingredients along with tomatoes and cook until combined well. add a splash of water if needed. When oil starts separating, add in the whisked yogurt and mix well. Cover and let it cook on low flame for about 2 minutes. Then add the fried okras and mix well.

When combined, lastly add the pickle, mix and turn off the flame. Serve hot with naan or roti. Enjoy!
