Pour the red wine into a saucepan over medium heat and let it reduce by half. This will take about 20 minutes, which you can use to prepare the other ingredients. Trim the pork cheeks, removing the fat from one side with a sharp knife, being careful to only remove the fat and not the meat.

Season the pork cheeks with salt and pepper on both sides. Sear them in a hot skillet with a drizzle of olive oil. This helps seal in the juices, making the pork cheeks tender and juicy.

Peel the carrots, garlic, and onion, then chop them. Place the vegetables in the bottom of the slow cooker, season with a pinch of salt, and add the tomato paste on top. Lay the pork cheeks over the vegetables, then add any juices from searing, the crumbled bouillon cube, the reduced red wine, and the water.

Set the slow cooker to LOW and cook for 7 hours. After this time, remove the pork cheeks and place the vegetables and sauce in a blender. Blend until you have a smooth sauce. For an even finer sauce, you can strain it, but this is optional. Serve the pork cheeks with the sauce poured over the top.
