Firstly, in a large mixing bowl sieve besan and rava.
Then add ginger paste, turmeric, sugar, pinch hing, salt, lemon juice and 1 tbsp oil and prepare a smooth batter adding with water or as required. - 2
Now add ½ tsp of eno fruit salt. you can alternatively use a pinch of baking soda.

Immediately transfer it to utensil and steam the dhokla batter for 20 minutes.

Now let it cool down and cut the dhokla.

For tempering heat oil. add in mustard,jeera, sesame seeds and a pinch of hing.
add green chilli, few curry leaves and allow to splutter. Further add ¼ cup water, sugar and salt. Let it boil and add lemon juice. - 6
Pour tempering.
Garnish with coriander leaves.
Finally, serve instant khaman dhokla with green chutney and tamarind chutney.
