Beer and rosemary chicken roast

Oh this is sooooo tasty and quick to prepare. Great midweek roast. I used new potatoes so no need to peel, bunged it in the oven and put my feet up. The beer gives a lovely glaze to the dish. Yummy😊 I used 4 chicken portions but used 2 trays so there was enough room the potatoes #chicken #roast #dinner #mainmeal

Preheat oven to 180. Wash and dry chicken. Grease a baking tray with olive oil. Add chicken. Wash dry and chop potatoes. Throw them in. Add fresh rosemary, Salt and pepper. Drizzle everything with olive oil

Now pour a glass of beer all over. If you've time, leave a bit to marinate

Bung it in the oven for about an hour, baste once or twice during cooking and that's it 😀
