Bhurtas are too mainstream, stuffed brinjals are a new way to eat them. Enoy!
Steps

Measure and Prepare all your ingredients beforehand. In a non stick pan add coconut, cumin, sesame seeds and peanuts. Dry roast them until fully toasted and changes colour. Take out in a bowl and allow to cool.

In the same pan pour 2 tbsp oil, add onions, ginger and garlic. Saute till fragrant and changes colour, then add the dry spices and combine well. Allow to cool.

Mix together the roasted spices and blend together into a smooth paste. DO NOT use water.

Slit the brinjal into 4 pieces keeping it still intact. Stuff them with the paste prepared. In the same pan, pour oil and add curry leaves. Let it splutter then add the brinjals and fry for about 2 minutes. Add water as needed and put the lid on. Cook until fully tender.

Your stuffed brinjals are ready. Serve with roti and enjoy.
