I wasn't so sure about this one but I had lots of extra blueberries and decided to try this out. I'm do very glad I did, it only lasted about an hour and there were requests for another. I've made it with other berries and they are all great.

Ingredients

  1. 1 csugar
  2. 1 cAP flour
  3. 1/4 tspsalt
  4. 1/2 cbutter
  5. 2lg eggs
  6. 2 tspVanilla
  7. 2 tsplemon zest
  8. 2 1/2 cblueberries
  9. 2 tbspraw sugar
  10. 350Pre heat oven to

    Mix dry ingredients and set aside

    Melt butter in large microwave safe bowl and allow to cool.

  3. 3

    When room temperature add Vanilla, and eggs and mix well. Add dry ingredients (do not over mix) fold in 2c of the blueberries and put into a prepared 9" dish.

    Take the remaining 1/2c of blueberries and press into the top of the pie and sprinkle with the raw sugar.

    Bake at 350 degrees for about 35 mins
