Ingredients

  1. 1 bagfrozen hash brown potatoes
  2. 2 tbspoil
  3. 2eggs
  4. 1 cupcheese (your favorite shredded cheese...Parmesan, cheddar or mozzarella)
  5. 2-3 slicesdeli ham or 4-6 slices of cooked bacon
  6. 1/2 pinthalf and half or cream
  7. Chives

Cooking Instructions

  1. 1

    Preheat oven to 350 degrees.

    Use oil to coat a cupcake pan for the mini quiches.

  3. 3

    Shape cups by pressing thawed hash browns into cupcake pan.

  4. 4

    Place in oven until golden brown.

  5. 5

    In a bowl, mix eggs and 1 cup of half and half. Add cheese and mix.

  6. 6

    Add pieces of ham of crumbles of cooked bacon to each hash brown cup.

  7. 7

    Ladle egg mixture into each hash brown cup...sprinkle with chives....place in preheated oven until golden brown.

    Let cool 10 minutes if you can ! and enjoy!
