Wash and finely chop the Thai basil. In a bowl, beat the eggs with the chopped basil and 1 teaspoon salt until well combined. Clean the oysters and set aside.

Heat 2 tablespoons oil in a pan. Once hot, pour in the egg mixture and spread the oysters evenly on top.

Cook over medium heat for about 3-5 minutes, then flip and cook for another 3 minutes. Remove from the pan and serve.
