Lagunero-Style Pork Sandwiches (Tortas "Lonches" Laguneros)

I live in the Comarca Lagunera, in the city of Torreón, Coahuila. Among its typical dishes are delicious Lagunero-Style Sandwiches, also called "lonches" (which means lunch in English). They are incredibly tasty and easy to make.

In a pot, combine 2 cups water (about 480 ml) with the juice of the three oranges, onion, garlic, orange peel, bay leaves, a pinch of salt, and pork lard. Cover and cook so the meat steams.

Once the pork is cooked, remove the lid, lower the heat, and let it fry on all sides. Turn the meat as needed so it browns evenly. When browned and tender, slice it thinly.

Slice the bread in half. Cut the avocados in half. Spread mustard on one half of the bread and mayonnaise on the other. On the bottom half, spread avocado with a spoon.

Top with as many slices of pork as you like, then add tomato slices, onion, and peppers. Sprinkle with salt. You can skip the peppers if you prefer. Place the top half of the bread on and enjoy!
