Flourless Orange Cake
Yummy and moist. Worth the effort! And it adds to my fruit intake hehe :) =^.^=
Cooking Instructions
- 1
Place washed whole oranges in deep pot of water and place on stove. Bring to boil and boil for 2 hrs refilling pot when neccessary. This is to soften the oranges and take some of the bitterness out of the pith.
- 2
Remove oranges and break apart with a spoon. Leave until cooled.
- 3
Preheat oven to 180°C gas oven. Line a spring form cake tin with baking paper and spray lightly with oil spray
- 4
Whisk the eggs in a bowl until almost combined. As the whisk is running, gradually add the sugar to ensure it dissolves well. Continue to whisk until pale and creamy.
- 5
Separate the orange flesh from the skin, discarding any seeds. Place flesh and any juice into a blender. Add all the orange skin unless it is thick and quite bitter. In that case add only the skin of 1 orange.
- 6
Blend the oranges until smooth. Add this to the eggs along with the nut meal, vanilla & baking powder. Fold gently until well combined.
- 7
Pour batter into cake tin and sprinkle extra sugar on top for a caramelised crust. Bake for 1 to 1 1/2 hrs until golden brown and a skewer comes out clean.
- 8
Enjoy hot or cold! Yummy with no butter goodness!

Fluffy Whole Mandarin Orange Cake Fluffy Whole Mandarin Orange Cake
When we eat mandarin oranges, we always save the peel for cooking. There are lots of nutrients in the peel and pith , so simply throwing them away is such a waste! That's why I decided to make a cake that uses whole mandarin oranges.2 would weigh around 165 g. Cut the fruit and peel to whatever size as you prefer. Add 1 tablespoon of rum for extra flavour. Easy orange cake with orange icing Easy orange cake with orange icing
I'm back on a baking kick so I thought I'd share this. This is a found recipe so I can only claim credit for the whipped cream dollop and mint leaf, though I have been known to serve it with raspberry puree as well. Oh, the original recipe called for self-raising flour instead of APF but I only have APF so I have included the baking powder and salt; if you use self-raising flour, do NOT add the salt or baking powder.
