Shrimp and Pork Dumplings (Há cảo)

Pour the dumpling flour into a bowl. Add a pinch of salt and 1 tablespoon of cooking oil. Gradually pour in about 3/4 cup boiling water (about 200 ml), mixing and kneading until the dough comes together. Once the dough forms a ball, cover and let it rest for about 10 minutes. If you want colored dough, add a few drops of food coloring.

I’ve tried making this with all-purpose flour, but it doesn’t taste or look as good. The wrapper turns out thick and more like a steamed bun, not as chewy as with dumpling flour.

While the dough rests, prepare the filling. Finely chop shrimp and pork, then mix with carrot and onion. Season with a little bouillon or seasoning powder to taste.

Roll the dough into a long log and cut into small pieces. Roll each piece out very thin, then use a cup or small bowl to cut out round wrappers. Dust with cornstarch to prevent sticking. Stack the wrappers if needed.

Place filling in the center of each wrapper and fold to seal. You can find different folding techniques on YouTube.

Line a steamer with parchment paper and steam the dumplings until cooked through.

Serve with sweet and sour fish sauce or soy sauce.
