Mix all dry ingredients into a large mixing bowl.

In a large measuring cup or separate bowl, combine eggs, milk, vanilla, and butter.

Add wet ingredients into the dry ingredients, and gently fold together until well combined. Do not over mix. Batter should still be slightly lumpy. For fluffy pancakes, the batter should be thick but still easily pourable.

Heat griddle to medium-low heat. Set batter aside while griddle is preheating. Lumps in the batter will start to soften, during this time. Gently stir again.

Grease pan with some butter. Pour a ladle full, around 1/4 Cup, onto pan and let it spread into round pancake shape.

Allow to cook until bubbles appear on the surface of the pancake and the edges are set. Flip and cook until golden brown. Finish by cooking the rest of the batter.
