Gather all the ingredients on your kitchen counter. Heat the olive oil in a deep pan. Add and sauté the onion and garlic until they soften.

Add the oyster mushrooms after separating and cleaning them with a damp paper towel. Sauté the mushrooms for a few minutes until they brown.

Add the lemon zest, mustard, wine, and lemon juice.

Season with salt and pepper, and boil for a few minutes, adding half a cup of water if needed. Lower the heat and simmer for about 15 minutes. Just before turning off the heat, add the thyme, parsley, crushed red pepper, and my favorite, turmeric. Serve and accompany with rice, potatoes, or fresh garlic bread.
