Cantonese style noodle means the white color gravy is cooked with stock soup and egg whites. It can be cooked with kuey teow, bee hoon or wanton noodles. Not much seasoning is required for the egg noodle, soup and soy sauce will bring out its tasty flavours.

Ingredients

4 servings
  1. Yee Mee (Fried Egg Noodle)
  2. Prawns
  3. Sliced fish cake
  4. Sliced pork meat
  5. Green leafy vegetable
  6. 2 pcssliced ginger
  7. 4 clovesdiced garlic
  8. 2eggs
  9. 1 tbspShaoxing wine
  10. Gravy Ingredients
  11. Stock soup
  12. 1 tbspsoy sauce
  13. Tapioca starch solution

Cooking Instructions

    Prepare stock soup with chicken or pork bone, adjust taste with salt. Alternatively you can use chicken stock cubes mix with water.

    Pan fry the prawns till aromatic and set aside. Retain the oil in the wok to stir fry the ginger and garlic.

    Add in sliced fish cake and meat and stir fry a while. Add in Shaoxing wine. Add in soup and vegetables. Place the prawns on the soup, then place the yee mee noodles. No need to stir, cover the lid and just leave it simmer for 2 minutes.

    Add in soy sauce and toss a bit. Add in starch solution. Add in eggs and stir the noodles and soup till thicken or dried up. Ready to serve.
