First, wash and soak the moong dal for one hour then strain the water and grind coarsely in a mixer jar. Keep aside.

In a mixing bowl take maida add ghee, ajwain and salt. Then rub it very well with your palm the add little by little water and knead very well to make a semi-soft dough. Cover and keep aside for 20 minutes.

Take a pan add 2 tsp oil heat it then add cumin when it crackles now add hing and add chopped onion. Saute for 2 minutes then add all the dry spices and then add moong dal and mashed potatoes. Mix very well. Cook for 2-3 my minutes. Turn off the gas.

Now take a small portion from the dough make lemon size balls and with the help of ur palm flat it in the middle then put some dal mixture and fill in this. Then it fold from all side and press with your fingers carefully to give shape of kachauri. Prepare all the kachrori.

Heat the oil on medium flame and put some kachauri in it turn the flame low and fry all the kachori low to medium flame.
