I've never been good at making cookies, but this time I tried a recipe that I modified on the go, and I have to tell you, they are amazing!!! They turn out cakey and crispy on the outside at the same time.

I've never been good at making cookies, but this time I tried a recipe that I modified on the go, and I have to tell you, they are amazing!!! They turn out cakey and crispy on the outside at the same time.

First, prepare the cookie filling. Place small dollops of Nutella on parchment paper and freeze them while you prepare the dough. This will make them firmer and prevent melting during baking. Preheat the oven to 350°F (180°C).

Start the dough: Melt the butter in the microwave and mix it with both types of sugar until well combined. Then add the two eggs and continue beating until the mixture is creamy and smooth.

Combine the flour with the baking powder and sift it over the previous mixture. Gently fold in the flour using a whisk or a spatula, just until you no longer see flour. Be careful not to overmix, or the cookies will be too hard.

At this point, add the chocolate chips and the toasted nuts, chopped into small pieces. I used some sliced almonds toasted in a pan with a drop of coconut oil, but you can use hazelnuts, walnuts, almonds... Finally, add the sea salt flakes. This is the key to the recipe!! It makes an incredible combination!

Form balls of dough and place a piece of Nutella inside each one, which should have firmed up by now. Seal the dough balls well and place them well apart from each other to prevent them from sticking together during baking. The dough is sticky, don't worry. It's better if they remain as balls; they will spread with the heat. Ideally, place 3 rows of 3 cookies each.

Bake at 350°F (180°C) for about 13-14 minutes. Keep an eye on them, and if they brown too much, 13 minutes is enough. If you make them very thick, leave them a minute longer. After removing from the oven, let them cool on a rack, although they are super good fresh out of the oven! I hope you like them!
