Gougères with Gruyère and Herbes de Provence

Preheat the oven to 400°F (200°C).

In a saucepan, bring 1 cup (240 ml) of water to a boil. Add the butter and 1 teaspoon of salt.

Remove from heat, add the flour, and mix well.

Return to low heat and cook the dough, stirring, until it dries out slightly.

Remove from heat, then add the eggs one at a time, mixing well after each addition until the dough is smooth.

Add the cheese, a little more salt, black pepper, and Herbes de Provence. Mix to combine.

Using two small spoons, form small balls of dough on a baking sheet. Bake for about 25 minutes, or until golden brown.
