Ingredients

  1. 2 cupswhole grain flour
  2. 1 tspbaking powder
  3. 1 tspbaking soda
  4. 1/2 tspsalt
  5. 1 tspcinnamon*
  6. 1/4 tspground nutmeg
  7. 3/4 cupoil
  8. 3/4 cupsugar
  9. 1/2 cupbrown sugar
  10. 2eggs
  11. 1/2 cupshredded zucchini
  12. 1 cupshredded carrot
  13. 2 tspvanilla extract
  14. 1 tbspnatural greek yogurt
  15. 1 tbsporange zest
  16. you can add 1/4 tsp of ground ginger and 1/4 tsp all spice
  17. Cream cheese frosting
  18. 1 packagecream cheese, soften. 8 oz
  19. 1butter stick or 1/2 cup butter
  20. 1 1/2 cuppowdered sugar
  21. 1 tspvanilla extract
  22. 1 tsporange zest

Cooking Instructions

    Mix dry ingredients:Flour, baking soda, baking powder, salt, and spices.

    Separately, mix wet ingredients: oil, eggs, sugars, greek yogurt, zucchini, orange zest, carrot, and vanilla extract until well mix.

    Combine flour and dry ingredients to wet ingredients until well incorporated.

    Put mixture in a greased pan

  5. 5

    Bake for 1 hour at 350 F or until golden on top and a toothpick comes out dry from the center.

    For the frosting, mix all the ingredients. Apply when the cake has cooled down.
