I love the warming effect of spices. Having grown up in Mombasa I hold dear memories each time I take masala Chai. My elder sister and I Joy used to go down to fort Jesus creek for some, we would look at the ocean and enjoy a hot tot of heavily spiced Swahili masala Chai, enjoying the breeze and snacking on some bhajia on the side. 😊❤🌸

Ingredients

serves 2 servin
  1. 4 1/2 cupswater
  2. Some cardamom (whole or ground)
  3. leavestea
  4. Some cinammon (whole or ground)
  5. Some ginger ground/an inch or fresh ginger peeled and crushed
  6. 1 dashblack pepper (optional)
  7. Sugar or honey to sweeten

Steps

  1. 1

    Bring the water to a boil until it is piping hot. Throw in the spices according to your liking. turn the heat down and brew for 1 min. You will begin to smell the spice aroma. I do a little under a 1/2 a tsp of each.

    Turn off the fire and let the spices steep for 2 -3 minutes. Add sugar to taste. Turn on the heat and let boil for 1 min. When you cook with sugar you end up using less sugar.

    Sieve into a tea pot and enjoy.

    I like mine warm, spices in hot tea make the tea taste hotter. Enjoy!
