Egg cups

I first tried these on new year's Eve in 2019.
Then I made them for a couple that is dear to us Ernest and Esther Nyingi, they had visited our home for the weekend and I wanted to make something out of the ordinary.

In a measuring jug, beat the eggs with salt and pepper until smooth. Set aside. A jug makes pouring eggs easier.

In a greased muffin tin, place your desired combination of fillings into each muffin cup. I started with greens, tomatoes and onions then capsicum at the top, abit of each.

Pour the beaten eggs into each muffin cup until the liquid almost reaches the top.

Bake for 20 minutes, until set at 180 degrees

Serve with preferred starch. Enjoy.
