This is a recipe I learned from my mother-in-law. Not many people cook it this way, but I have to say it’s absolutely delicious.

Wash the beef tongue thoroughly, cut it into pieces, and cook it in a pressure cooker for 45 minutes to 1 hour, depending on the size. Let it cool, peel off the outer skin, and slice the tongue.

Once the tongue is ready, prepare the other ingredients.

Sauté the onions until golden, then add the garlic, followed by the tomatoes. Add the seasonings, ají panca, ají amarillo, salt, and sugar. Cook the mixture well, adding some of the reserved broth as needed to prevent burning. Add the potatoes, carrots, peas, mushrooms, and bay leaf. Place the sliced tongue on top and cook for about 20 minutes, adding more broth as needed. After 20 minutes, add the raisins and wine, and cook for another 10 minutes.

When done, remove from heat and sprinkle with chopped parsley. Serve and enjoy this delicious beef tongue stew.
