Grind chopped onions, garlic cloves and ginger in mixer grinder with little water and make paste. In a pan heat oil. Add chopped lady's fingers and saute till cooked. Transfer into a bowl.

In the same pan heat oil. Add mustard seeds, cumin seeds and fenugreek seeds. When crackles add asafoetida and curry leaves. Add prepared onion garlic paste and saute till oil seperates. Meanwhile beat curd and besan and add enough water (approximate 1/2 cup)

Now add turmeric powder red chilli powder, dhania jeera powder and garam masala powder. Mix well. Add curd besan mixture and mix well.

Add cooked bhindi and salt. Add chopped coriander leaves and simmer for 5-7 minutes. Delicious dahi bhindi is ready. Serve with roti or paratha.
