Ingredients

20 minutes
1 serving
  • 1large mushroom (i.e. portabello)
  • 2 rasherssmoked bacon
  • 1/2brown onion
  • 3 tablespoonsveg, seed, or nut oil (not olive oil or butter)
  • 1 slicecheese
  • To tastesea salt and ground black pepper to season

    Begin prep...

    Chop the onion and bacon

  3. 3

    Pluck out the stem from the mushroom, and remove the gills with a teaspoon

    Sauté the bacon and onions in a skillet at a medium heat, for 3½-4 minutes, stirring every so often. Season occasionally in the pan until the bacon is cooked and the onions have softened

    Pack the mushroom with the bacon and onions (I'm using a Lancashire large mushroom)

    Cover with the cheese

    Place in the skillet and cook on a medium heat for a further 3-4 minutes until cooked

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.

May i ask what a rasher is ? The recipe calls for two rashers of bacon
