Ingredients

4 servings
  1. 1zuchinni, thin sliced
  2. 8 ozcherizzo (or hot sausage), chopped into bite size chuncks
  3. 2 cansfire roasted tomatoes
  4. 2 clovesgarlic, minced
  5. 1/2red onion, sliced into chunks
  6. to tastesalt and peper
  7. 4 oztomato paste

Steps

  1. 1

    Brown cherizzo chuncks.

  2. 2

    Add onions and garlic to meat, cook until onions are translucent.

  3. 3

    Add zuchinni, cook on medium heat 4min stirring often. Ensure all bits at bottom of pan from browning meat are part of sause.

  4. 4

    Add both cans of fire roasted tomatos and season then cover and cook on medium for 15min.

    Add tomato paste and simmer covered for 10 min.

  6. 6

    Cool for 20 min and serve.
