Prepare mix: eggs, soda water, cake flour. Leave crumbs

Cover chicken with mix then bread crumbs. Do it x3 for the crispy crunch

Prepare sauce: oil, ginger, garlic

Prepare sauce: add soy sauce, vinegar, lime juice (if you want), and brown sugar

Mix water with corn flour then add it to the sauce

Glaze chicken with sauce then add sesame and scallions on top of chicken
