Chilli and ginger immune boosting chicken

Marinate all the ingredients of the marinade and leave minimum 2 hours. Best overnight

On the day of cooking....first heat the pan. Spray 5 sprays of 1 calorie spray oil

Add chilli, ginger, garlic, coriander and stir for 3-4 minutes

Add the sliced onion and add the cumin seeds. Cook for 10 minutes

Add the tomatoes. Cook for 3 minutes

Add 200ml water and let it simmer for 2 minutes

Add the chicken and then add another 200ml water ensuring the chicken is fully covered

Cook on medium heat for 10 minutes with a lid on

Add garam masala by sprinkling on top and leave to cook for 5 minutes with lid on

Garnish with coriander leaves. And ready to serve!
