An easy peasy dish of yummy mixed Red and Green Amaranthus Stir Fry from my kitchen. It's an amazing side dish that goes very well alongside both Rice and Rotis. You will love it. Not only is it easy to do, it's loaded with many a Vitamins and Minerals that are essential for the good growth of a body.
It's a perfect Green Leafy Veggie that's healthy and beneficial on any day for the proper growth and functioning of the body in all.
These are partially Red and Green Amaranthus Greens as available here in the City. Though the rich Red colour is not distinct, it's absolutely flavourful. And that's why it is actually a mixed one. Anyway that's not a big problem. Afterall the taste is what makes it the most satiating dish.

Heat Oil in a kadai. Saute sliced Onions on a low heat along with Garlic garlic paste. Let the raw smell fade away before you add the spices. And finally the Amaranthus Leaves. Mix well and cook on a low heat until done. It does not take much time. Adjust Salt and take it off the heat.

Red Amaranthus Leaves also called as Laal Maat in Hyderabad. These are to be cooked taking only the leaves leaving the stems aside. Wash them thoroughly under running water before use. These are abundantly available in our Country and are easily grown in muddy places. An easily done recipe with just a few simple ingredients that are available in every kitchen. A comfort food by all means, it can be enjoyed with Boiled Rice and Poppadoms. Happy Cooking Everyone!
