My child wanted to eat this dish, so I told them to make the curry paste themselves if they really wanted it. Usually, I only make this once or twice a year because making the curry paste takes a long time, and when I do, I make a big pot. In a pan, simmer the thick part of the coconut milk until the oil separates. Add the curry paste and stir-fry until fragrant. Add the chicken drumsticks and the remaining coconut milk, then bring to a boil. Season with soy sauce and a little palm sugar. Adjust sweetness to taste.

In a separate pan, heat oil over medium heat and fry some of the noodles until crispy. Drain on paper towels. Fry about three portions for topping.

Boil the remaining noodles, then toss with garlic oil.

At home, everyone assembles their own bowl—add as many noodles and toppings as you like.
