In a mixing bowl take handva flour. Add suji, curd and enough water and make thick batter. Add salt and mix well. Cover with lid and allow it to ferment for 6-8 hours.

From 1 cup boiled corn kernels, keep 1/4 cup whole kernels aside. Now grind spinach, 3/4 cup boiled corn kernels and green chillies in mixer grinder.

Now add this ground mixture into batter. Add turmeric powder red chili powder, chopped coriander leaves and boiled whole corn kernels which keep aside.

Mix well. Add little water if required. Add eno and 1 teaspoon water over it. Mix well.

Heat pan or tawa. Apply little oil. Put 1/2 teaspoon sesame seeds. Pour batter with spoon and spread it. Keep thick as you like. Apply little oil around edges. Cover with lid and allow it to cook from bottom till golden. Then flip the side. Cook this side too.

Pan handvo is ready. Enjoy hot with green chutney and tomato sauce.
